Overnight Carrot Cake Oats

Some days I am really busy with life. Like really busy. But, I still make eating breakfast a priority. It's a priority mostly because if I don't eat breakfast I get hangry (read: hungry & angry) and everyone I encounter knows it. With this recipe, I can grab a mason jar out of the refrigerator, pop it in the microwave for 60 seconds and voilà, breakfast is done!

If you didn't already know this, I am a fan of sweets. Give me all the sweets. I try to keep my sweets as healthful as possible so this carrot cake oat recipe hits the spot without all the sugar. Luckily for you, you can devour this recipe and have no remorse. 

Ingredients

  • 1 cup almond milk (or other milk of choice)
  • 1 mashed banana
  • 1 large carrot, peeled and grated
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup maple syrup
  • 1 cup old fashioned oats
  • 1/4 cup chia seeds
  • 4 Tbsp. walnuts

Directions

  1. In a small bowl mix all of the ingredients together. Divide them between two mason jars and refrigerate over night. You can enjoy the oats cold or warm them in the microwave.
  2. Top with 2 tbsp. walnuts right before eating.
