Strawberries & Cream Overnight Oats

The other morning I needed to be out of the house by 7am. That might be a normal time for most people; but for me, that is early. Listen, I've tested it time and time again. My body naturally wakes up at 9am every day. It doesn't matter when time I go to bed, I am up at 9am. I realize for a lot of people their body naturally wakes up at 6am. I feel sorry for those people. But anyway, for me to have to be out of the house by 7am, I had to wake up at 5am. FOUR FULL HOURS BEFORE MY BODY LIKES TO WAKE UP.

So, the night before my early wakeup call, I decided to create a new recipe for breakfast so it would be ready to go as I ran out the door. These overnight oats were my new creation. I had bought a few containers of strawberries from the grocery store days earlier because they looked delicious and were on sale.

This recipe reminds me of when I was a child and I would have the strawberries & cream instant oatmeal packets before school. Yes, it reminds me of that, but this is way more delicious, and with whole chunks of strawberries, it's way better for me.

Ingredients

  • 1/2 cup quick cook oats
  • 3/4 cup almond milk (or your milk of choice)
  • 1/2 Tbsp. chia seeds
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 Tbsp. maple syrup
  • 4 large strawberries, washed & chopped

Directions

  1. Place all ingredients in a mason jar and mix well
  2. Store in the refrigerator overnight
  3. Optional: Reheat when ready to eat (I like mine cold!)
