Now on to the FOOD - the reason you come to this blog. For the past two months I have been making some kind of soup or crock pot recipe on Sunday afternoon. This meal then feeds my husband and I on Monday and Wednesday night when I work late. The recipes have been super easy – like just reheat and serve.
I know, I know – I have been MIA lately. But, really, life has been crazy. I returned from my Alaskan and west coast vacation and had approximately two days to get ready for the new school year. Fall semester started off with a bang and I have been busy as ever with all of my students. I have been balancing teaching full time, seeing patients, and consulting at nursing homes.
In the next 30 days, I will be traveling to locations on the west coast not once, not twice, but three times. First, I will be heading to Bend, Oregon for one of my best friends bachelorette parties (whoo, girl time!). Then, I will head back to Ohio for one short week. Then, I board another plane headed to Anchorage, Alaska.
If you read my last post, I introduced you to The Wahl’s Protocol which is a version of an autoimmune protocol. I am not going to lie - this diet is tough - doable, but tough.
If you know anything about me, you know that I love sweets. Like, give me all the chocolate. I decided that if I was going to follow this protocol and cut out dairy, gluten, and pretty much all grains, I wasn’t going to be able to cut out chocolate. So, it’s a good thing that this protocol allows dark chocolate.
So it's been one full week that I have been on the Wahl's Protocol. I wasn't expecting to see changes within just one week and I honestly didn't notice them at first. But, this past weekend, I was out to eat at a restaurant with a fixed menu. I tried to stick to the protocol as much as I could but I just know that I took in small amounts of gluten and dairy. That night, I felt different. I felt so full, bloated, and just all together crummy.
